I like all vegetables, yes, even kerela (bitter gourd) and baingan (egg plant). My mother made sure I ate them. However, I ate very little, and till date, I eat a very small quantity of veggies. I take only as much as I can eat with roti. We try to make soups, but not everyday. And salads, you can chew as much, can’t you. So you see, my vegetable consumption is very less, will put even child to shame.

My husband would berate me for eating so less veggies and asked me to consume vegetable juices. I was being my usual lazy self when I came across the benefits of vegetable juices in a group that revolves around nutrition and wellness. That was like an omen that I should include vegetable juices in my diet. I asked a few questions in the group and thankfully, all got answered within no time. For 2-3 glasses of juice, I take –

  • 1 carrot
  • 1 beetroot
  • 1 tomato
  • 10-15 leaves of spinach
  • 1 thick piece of ginger
  • 4-5 mint sprigs
  • 1 fruit (10-15 grapes, 1 apple, watermelon slice – you shouldn’t mix fruits and veggies, but I like the sweet taste that the fruit provides)

In the summer months, when red carrots stop being available, you can replace them with bottle gourd, pumpkin (I like the white one more as it is juicier) and cucumbers.

Put them in a mixer and strain them. Add little fiber from the strained material into the juice. If you have a good quality food processor or juicer, you may not need to strain at all, as it comes equipped with an inbuilt strainer. You may add rock salt and lime juice for extra flavor.

So, it’s been more than two months now, and I have been having at least one glass of vegetable juice every day. And, what difference I have observed in me –

  • My skin glows. My neighbor has been telling me of late “Have you got a magic potion? You are growing younger by the day?”
  • I haven’t got any new bout of acne for last 2 months. All my life, I have been prone to acne. I have had acne in teenage and even adult acne along with hyperpigmentation. I have consumed medication of all types and was told by my dermatologist 3 years ago, that I would need to apply an acne cream till I got my menopause. We were talking about a good 10 years here. For last 2 months, I have stopped applying this acne cream and haven’t got a single acne since.
  • 5 days a week, I go raw in the morning, that is I don’t eat cooked food till lunch. Usually, if I skipped breakfast, it would make me hungry in the evening and I would end up hogging. But, since I have started vegetable juice and nuts and seeds, it takes care of my breakfast and doesn’t make me feel ravenous in the evening as well.

I am not attributing these changes solely to vegetable juice consumption, however, as far as I remember, it is the only change I have made to my diet in the last two months.
